This keto lady fingers recipe is great to use in a keto tiramisu recipe, trifle or even as sweet treat with your morning coffee.

Made with almond flour, these lady fingers are also gluten-free. They are not as crunchy as the traditional recipe but make a decent low carb substitute.

No butter is used to make this low Italian cookie, making them a great dairy free option too. The taste of these low carb lady fingers is fairly similar to the original ones but without the crunchy topping. This is because we are not baking with sugar.

What are lady fingers?

Not to be confused with the vegetable okra, which is sometimes called lady fingers, these soft sponges are based on an Italian biscuit made with a sponge cake mixture. These Italian cookies are essential in a traditional tiramisu recipe.

They are known as a cookie or biscuit (depending upon what country you are in).

The shape is meant to represent a lady's finger. With my piping, it's not too far off my sausage like fingers!

How to make keto lady fingers

We used the traditional way of making lady fingers but used low carb ingredients. It involves a lot of whisking but is fairly simply. No baking powder is used in the traditional method so we have kept this too. The lift of the cookies is all in the whisking of the eggs.

Having a steady hand piping the mixture helps. As you can see from my photos, my piping skills still need a bit more practice!

This is a three bowl recipe. The eggs are separated so you need one bowl for the egg whites, one for the egg yolks and another to mix the dry ingredients.

The low carb sweetener

For the keto sweetener we used allulose sweetener as it does not crystalize when cool. We prefer allulose for ice cream and more delicate low carb desserts. For this recipe we would recommended using a powdered sweetener if you don't have allulose to hand. Make your own by processing your granular sweetener such as erythritol or monkfruit in a coffee grinder.

Storage

Keep these sugar-free lady fingers in the refrigerator in a sealed container. They will last up to 4-5 days.

To freeze these cookies, place a layer of parchment paper between the layers and store in an airtight container. They should last up to 3 months in the freezer.

Recipe Tips

Ensure that you use clean, dry, cool glass bowls for whisking.

The ladyfingers could be served as light cookies with a drizzle of sugar free chocolate melted over them.

When making the lady fingers you could dust them with the powdered sweetener, just as the original are dusted with sugar. However, the result will not be the same crunchy topping.

We have not tried this recipe with coconut flour but suspect that it might not work as coconut flour is denser than almond flour. If you have a try, please let us know how you got on!

Ingredients

  • 1 ½ cups almond flour
  • ½ teaspoon xanthan gum
  • 4 large eggs separated
  • ½ cup allulose or other powdered sweetener
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  • Preheat oven to 175C/350F. Line two baking sheets with parchment paper. Prepare a piping bag with a medium nozzle.

  • Whisk the egg whites in a large glass bowl.

  • Add ¼ of the allulose and whisk until the egg whites until stiff peaks form.

  • In another separate medium glass bowl whisk the egg yolks, ¼ allulose and vanilla extract. Whisk for about 5-8 minutes until the mixtures is light and thick

  • Pour the egg yolk mixture over the whisked egg whites and gently fold in.

  • In a small bowl mix the almond flour, salt and xanthan gum.

  • Fold the almond flour mixture into the egg whites.

  • Spoon the mixture into a piping bag and pipe about 3 inch long fingers on the baking sheets, about an inch apart.

  • Bake for 15-18 minutes until golden and firm.

  • Cool on the baking tray to room temperature.

  • Transfer to an airtight container and store in the refrigerator

Notes

The whole batch is 40 ladyfingers. We have put one serving as 5 ladyfingers.

The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
